Nutrition at Villanova

Nutrition at Villanova starts with Gail Gamble, chef/nutritionist for Villanova Dining Services. Gail holds a degree in Culinary Nutrition from Johnson and Wales University. Gail perfected her craft under the tutelage of famous Chef Walter Staib, owner of the City Tavern in Philadelphia, and Sandals Royal Caribbean. Gail also worked as a chef at the Viking Range store in Bryn Mawr. Gail joined the Dining Services team in the fall of ’05 as Assistant Chef in St. Mary’s Hall. In March 2006, Gail competed in the NACUFS Culinary Challenge on the campus of Virginia Tech where she placed second and won a bronze medal. Gail's program for National Nutrition Month in 2007 took first place as "Most Innovative Nutrition Program" as selected by NACUFS, The National Association of College and University Food services.
